RECIPE INGREDIENTS:
1/2 k. fresh dilis, small ones are preferable
BATTER:
1c. all purpose flour
1 c. cornstarch
1 1/2 tsp. baking powder
1 tsp. salt
1/4 tsp. pepper
1 tsp. MSG
3/4 - 1 c. water
1 egg, well beaten
Cooking oil for frying
PROCEDURE:
Sift dry ingredients into a bowl. Blend in egg and water beating throughly to make a smooth batter. Set aside. Take 5 to 6 pieces of dilis and shape them into a fan, using the tail as a focal point. Dip in batter and fry in hot fat.
A better product is obtained by filleting the dilis, cutting it butterfly fashion, removing spine, dipping in the batter and frying. But it can be quite tedious.
